Soloing
With everyone gone I feel like there's a lot of contested way points (well, it's more than a feeling, but whatever). Is there a really really good soloing prof? There just never seems to be anyone around. I hate walking away from vets/champs/etc or taking forever to re-take a waypoint just because there's nobody around.

What do you mean with everyone gone? Lots of people are still playing. Try announcing big events in map chat. I've started many events solo, only to find a dozen people join in once it's started.
As for a solo profession I'd say guardian or ranger are my top in PVe anyway. Guardians take less damage and have great boones. Rangers have pets which help by having a friend handy to split aggro. Some people also say warriors are easy mode in PVe, but I find them less survivable, though they dish out more damage.

A few minutes ago fire ele was up, I announced it... Five minutes later still no one.
Yeah I'm thinking guardian. Warrior seem good with healing signet, but I dunno if that's still good at later levels. That with 5 points in the toughness tree (for the +def >90% bonus) and you can pretty much mow down vets as a warrior - vets that would usually require actually paying attention -_-. I almost took down a champ as a warrior just now, I was scaled 13 to 10 and it was 8, but something it had 1-shot me (I avoided it the first 10 times, trust me).
On an un-related note, how do I use the model replacement thing for weapons, and does it work for weapons much higher than the one I'm using, and (lastly), does it cause both weapons to become bound?

I assume you're asking about transmutation stones. You can transmute any skin to any item of the same type, but they become one. One of them is gone at the end, the other is soul bound.
What server are you on, btw, because mine always has people running around?

Tarnished Coast is a different story. Even at the hours I play, which is all of them pretty much (insomnia sucks), I usually find people around. I don't know the population of Eredon Terrace, but if you don't have a guild or friends there, you might want to try a server transfer. There are definitely people around on Tarnished Coast. Not every place at every hour but enough to do most events most times.

I usually solo (since none of my friends in my guild seem to be online or want to play in a group

By now I got all 8 professions (half of them below 30, the other half above 30 only one at 80) and usually just run around trying to gather materials (when my crafters have already emptied my stock) or complete the daily achievement.
But recently I noticed a trend in announcing larger events in the map chat (I'm on Kodash) and usually the event gets tackled a few minutes later by available people around (take into consideration that not everyone might be able (or willing) to teleport to a nearby waypoint), so sometimes it takes a bit longer for people to arrive.
If the fire elemental you're refering to is the one in the reactor, I can understand why nobody reacted... Every time I joined into that fight I got down pretty fast and hard (and often), I have yet to see this event be completed successfully...
GW2 is also quite nice for spontaneous party building... See someone struggle because he overestimated his abilities (like someone more than 3 below your downleveled level in a lower level region), just invite him or her into a party and either help them get where they need to go (and prepare to rez them as often as neccesary
) or give them hints where better to go.
And if you aren't so sure what to do, just ask around. Maybe someone will take some time of their "grind" (or however they keep themselves busy) and come to your aid. It is a pretty social game anyway, isn't it?

I'm also on Tarnished Coast, and its been great while soloing (which is mostly what I've been doing as I've been leveling)... even if you come across an event, such as a Champion, where no one's around, a quick shout in /map will result in 3-5 people rushing the position to take it on.

Mesmer is a beastly solo artist. You can faceroll Champs in Orr and one shot karka without being touched once.

I would say guardian is my favourite to solo with
