Regardless, in WoW grind = better gear. That defaults it out of any serious eSports scene.
Not every game has to be, or even should be, something where eSports is possible. Guild Wars however has a good history of it, and by equalizing everyone, it keeps the possibility.
While you might enjoy grind, or hunting gear that gives you advantages over others, that's simply not what GuildWars 2 is about. Don't expect it, and if it's something that you absolutely need in your games, GW2 really is not for you.
Anyway, there are multiple forms of PvP in GW2, completely different from each other. There are multiple articles you can read up on, but a good starter is what's found on the GW2 website: http://www.guildwars2.com/en/the-game/pvp/pvp-overview/ . Disclaimer: This article doesn't talk about World vs World vs World, that hasn't been official detailed yet.
Basically, there's 3 types. Hot joinable games, in similar format as tournament games but accessible to more casual players and more customisable. You can jump in and out of games, just like CounterStrike, CoD, BF, etc. There is a game list just like any decent FPS game has a "Server list". Each game has it's own rules, auto-balance on/off, map, number of players, etc. This ranges from 1v1 fights to some pretty large 10v10 fights.
Tournament games, this is where eSports come in. A standard tournament is 5v5. There are four subcatagories, to quote Anet:
Last but not least is the World vs World vs World PvP type (abbreviated to WvW or WvWvW). This is COMPLETELY different to the first two. You are dropped in a massive map divided into 4 sections. You're team is your entire server (or "world") and your enemies are the two other servers. You fight across huge battlefields, you can take over towns and use siege weapons to hold off enemies, or siege enemy towns and take them over. Guilds can take possession of these towns/outposts. One match goes for the entirety of 2 weeks, after which a winner is announced and some sort of global benefit is given to the winning server in PvE (details of this aren't given yet). Servers are matched up based on performance, so the servers that repeatedly win won't fight the same servers, but fight the other succesful ones. Conversely, servers that repeatedly lose are matched up with ones that do the same.Pickup Tournaments: These single-elimination tournaments wait for 8 teams to join before starting. Once they start, they go through 3 rounds of eliminations, with winners receiving qualifier points.
Monthly Tournaments: For monthly tournaments, you'll need a certain amount of qualifier points to join.
Yearly Tournaments: These grand tournaments feature the winners from the monthly tournaments slugging it out for the right to call themselves the best PvP players of the year.
Player-Run Tournaments: These tournaments will be customized by players, allowing for great flexibility and unique bragging rights.
