Anpac - Australia, NZ and Pacific guild [Update: original name got stolen]
Hello all, my name is Matt, and I run Anpac. Anpac is a guild who caters for (but not restricted to) players of GW2 from Australia, New Zealand and the Pacific region.
Our only entry requirement is that you be 18 years or older. This will be a mature guild, and while we will still be behaved and civil we are an environment for adults to be comfortable in.
With the guild being born on the day that GW2 is released (or asap thereafter) we are currently doing a pre-release recruitment. In fact, this forum will be the genesis of this campaign, first reply/applicant will be the first member!
We are recruiting all classes and all races, so don't worry about who you are/going to be.
We don't have any alliances yet, but that all can change on release. Following me to GW2 will be numerous other guild leaders from past MMOs and they each will be running their own guilds. I forsee alliances with these guilds from the get-go.
In short, we are a community friendly guild who's vision is to provide support and company to our members. We are not competitive, hard core, RP, or veterans. We are just a collection of like-minded people enjoying the game together. We are going to have fun in PvP, WvWvW, PvE, everything! If you level 1-80 in WvWvW only, we will congratulate you just the same as if you speed-ran a hard dungeon. I believe the whole game is good, no need to limit ourselves to one part of it.
UPDATE: We will have our on Mumble server soon after reaching 10 members or more. VOIP is not compulsory, but adds to the fun! But if GW2 implements its own VOIP options, then we'll probably live off that until we become much bigger. Also, sorry TS and Vent users, but it has to be Mumble for this guild.

Contacting me via guild website or this thread is the best way currently, as I don't have an IGN (no one does!).
We do not mind, in fact we encourage, multiple guild membership. How can we be a guild focussed on community if we don't let you join other communities?
Just to make totally clear, the guild will be running off GMT+10 (inclusive of DST). This means the guild clock is ticking off whatever time it is in Sydney, Australia. However, as I said, the doors are open to the whole world!

From the way you have described this guild, it seems like the perfect guild for me. Exactly what I was hoping to find. Hopefully it picks up and lots of people join. And I like the name too.
